When you have a food blog, you have a lot of food around all the time. If you're like me, your food blog is just a side hustle so you feel SUPER obligated to eat everything that you make and not waste food. That’s where these Chimichurri Chicken Wings came to life! I absolutely loved the Cast Iron Chicken with Roasted Garlic Chimichurri, but I had an entire mason jar of chimichurri leftover! And I couldn't just let them go to waste!
So with this in mind, I dumped them onto some chicken wings I had accidentally defrosted instead of the chicken thighs I thought I was getting. A friend of mine came over and we ate wings while marveling and the ridiculousness of the Bachelor (which I secretly love). These chicken wings are light tasting, have a lot of zing, and are perfect with ranch. Well, I think all things go with ranch to be honest. Ranch or chocolate.
This post is super simple, because this recipe is super simple. And sometimes that's exactly what you're in the mood for. I'm having a weird week because I'm going through a breakup AND getting ready for my Mardi Gras themed birthday party that I'm having on a Wednesday. Part of my soul wants to curl up on the couch with a book until I heal, my typical method of recovery. However, I know I need to throw myself into cooking and pursue my passion. I think I will do a little bit of both as I enter my 30s with a little bit of heartache but a lot of optimism.

Recipe
Chimichurri Chicken Wings
Equipment
- Oven
Ingredients
- 1 cup Roasted Garlic Chimichurri sauce
- 2 lbs chicken wing pieces
Instructions
- In a gallon size bag, combine all ingredients. Marinate for between 30 minutes and 24 hours.
- Preheat oven to 400. Spread the chicken wings out onto a baking sheet. Bake for 30 minutes, flipping halfway through. Serve!
